The wines of Katarzyna Estate are produced using classic technologies with predominantly manual labor. During the grape harvest, the sugar content, titratable acids and phenolic ripeness of the grapes are monitored daily, through analyzes and tastings. Accurate logs of results are kept to build up the database with which to assess the real potential of the terroir.
The wines are aged in French oak barrels, regularly topped up and monitored for quality changes. After bottling, the wines are aged in bottles in an underground tunnel with a constant temperature of 14°C and 75% humidity.
A great advantage of the cellar is that the team works with and disposes of many, and mostly different in terms of qualities and specifics, areas in our vineyards. This allows for a large number of different batches of wines to be used to shape the final products.
